Sitting down at a table to share a meal has always been one of my favorite feelings in the world — exciting, comforting, and full of life. That feeling is what lit the fire in me. I stepped away from professional kitchens, and I won't lie — I miss the people, the rhythm, and how naturally cooking once came to me. But now I cook in a much more personal setting, and I've come to trust my paella enough to share the whole experience with you. From a quiet dinner for two to a gathering of your favorite people, up to 25 guests. I can't wait to cook for you.

My father and I cooked together all the time back in Puerto Rico. He was not just my dad, he was my best friend. When I moved to Portland, he came with me for about a month, and we cooked together here too.
Now, every time I cook, I feel him with me. He was the best human on this planet, and I want to share my paella skills with people. I also need this outlet so I do not miss him quite so much.
My friends here and back home know I like to nurture people. I come from a family that does that, and I want to share it with you guys. I started making paellas when I got here to Portland, but it has always been one of my favorite things to eat. I love rice. Rice is in my DNA. Me and my dad got into making all sorts of rices when I started culinary school.
The flavors I grew up with on the island, sofrito, achiote, sweet plantain, travel with me into every pan, reinvented through the fire and patience of a Spanish paella.
Going out to eat with my family is my favorite thing in the world. Being so far from them means I do not get to do it nearly enough. I love taking care of people, and being able to share that energy, that vibe, through my food is truly an honor.
When I cook, I feel like myself. The kitchen is where I am most alive, most honest, and most connected to him.
